Very special green recipes | Starters

Fagottini with aromatic herbs (4 servings)

Ingredients
  • 6 eggs
  • 7 mint leaves
  • an handful of parsley
  • 4 sage leaves
  • 10 g chives
  • a pinch of oregano
  • 40 g breadcrumbs
  • 40 g grated Pecorino cheese
  • 4 tablespoons olive oil
  • salt and black pepper
  • extra-virgin oil, basil, capers, salt, pepper


Preparation method

  • Beat the eggs in a bowl. Add the breadcrumbs, the Pecorino cheese, all the minced aromatic herbs, the capers, salt and pepper.
  • Heat the oil in a pan and add the mixture. Keep cooking for 5 minutes covering with the lid and then turn the omelette
  • Cook for 3 minutes and serve warm, garnishing with green leaves of a vegetable.
