Ingredients
- 6 eggs
- 7 mint leaves
- an handful of parsley
- 4 sage leaves
- 10 g chives
- a pinch of oregano
- 40 g breadcrumbs
- 40 g grated Pecorino cheese
- 4 tablespoons olive oil
- salt and black pepper
- extra-virgin oil, basil, capers, salt, pepper
Preparation method
- Beat the eggs in a bowl. Add the breadcrumbs, the Pecorino cheese, all the minced aromatic herbs, the capers, salt and pepper.
- Heat the oil in a pan and add the mixture. Keep cooking for 5 minutes covering with the lid and then turn the omelette
- Cook for 3 minutes and serve warm, garnishing with green leaves of a vegetable.
