Very special green recipes | Starters

Gazpacho (4 servings)

Ingredients
  • 5-6 ripe tomatoes
  • 2 cloves of garlic
  • 1 cucumber
  • 1 little paprika
  • 4 slices of bread
  • some crumbs
  • 1 onion
  • Red wine vinegar
  • Olive oil
  • Salt

Preparation method

  • Peel the cucumber and wash the tomatoes. Dice them and chop the paprika and the onion. Put everything in a bowl, add the garlic and the crumbs.
  • Season with a tablespoon of vinegar, one of olive oil, salt and mix. Put everything in a mixer and blend slowly to obtain an homogeneous cream.
  • Put the gazpacho in a bowl and add some salt. Leave in the fridge for about 2 hours. Serve with four slices of toasted bread.
