Very special green recipes | Side dishes

Grilled vegetables (4 servings)

Ingredients
  • A mix of vegetables ( red radicchio, peppers)
  • Extra virgin olive oil, salt, pepper, balsamic vinegar
  • 1 clove of garlic
  • mint, oregano


Preparation method

  • Wash and slice all vegetables rather thick. Preheat a pan at high temperature and then lower the heat.
  • Cook all vegetables on the preheated pan leaving onions and peppers at the end because they dirt more.
  • In a saucepan pour 8 tablespoons of extra virgin olive oil, salt, pepper, 1 tablespoon of balsamic vinegar, oregano, mint and a clove of garlic.
  • Mix all together and pour the sauce obtained on the vegetables previously laid on a tray.
