The menu of the month | Starter

Surprising Pyrex (4 servings)

Ingredients:

1 head of lettuce
2 carrots
2 leeks
2 potatoes
chive
rosemary
4 slices of bread
Vegetable Stock (1)
Extra virgin olive oil


Wash the lettuce and boil its leaves in water for few seconds.
Strain and let it dry on a cloth.
Cleanse the vegetables: cut the carrots and the leeks into round pieces and the potatoes into slices.
Ungete una pirofila con olio extravergine, formate uno strato di carote, uno di patate e uno di porri; condite col sale e con un trito di rosmarino ed erba cipollina.
Oil a baking tin, make a layer of carrots, one of potatoes and one of leeks; season with salt and a mix of rosemary and chive.
Cover with lettuce leaves, pour a cup of stock and bake at 160° C for 45 minutes. Serve hot.

Drink Suggestions

We suggest a good white wine: “Fiano di Avellino” or a “White Pinot”


(1) Boil a carrot, an onion, a stem of celery and a little tomato in slightly salted water for half an hour.
