Very special green recipes | Salads

Mix salad (4 servings)

Ingredients
  • 500 g green and yellow peppers
  • 500 g tomatoes (not too ripen)
  • 100 g black stoned olives
  • some capers
  • 2 cloves of garlic
  • salt, balsamic vinegar


Preparation method

  • Wash the peppers and brown with some oil and 2 cloves of garlic.
  • Salt and mix until their peel becomes brown
  • Let them cool, remove the stem and cut into little strips.
  • Wash and slice the tomatoes.
  • Mix together peppers, tomatoes, anchovy, some capers and dark olives.
  • Dress with salt, extra virgin olive oil and balsamic vinegar.
