Spaghetti with salmon
and cherry tomatoes
(4 servings)
Ingredients
350g spaghetti
250g cherry tomatoes
100g smoked salmon
8 mint leaves
1/2 onion
extra virgin olive oil, salt and green pepper
Preparation method
In a pan brown the onion with 3-4 tablespoons olive oil and 4 small chopped mint leaves
Add the salmon previously cut into thin strips and cook for 4 min. Add the cherry tomatoes cut into two halves, mix and cook for 5min.
Drain the pasta still slightly firm and mix with the soup for 2min.
Serve garnishing with some mint leaves.
