Very special green recipes | Second courses

Artichokes at �Romana style" (4 servings)

Ingredients
  • 8 artichokes
  • 4 cloves of garlic
  • 1 lemon
  • 2 glasses dry white wine
  • 1 bunch of parsley
  • extra-virgin olive oil, salt and pepper


Preparation method

  • Wash the artichokes and cut them removing the external leaves, the stems and the tips. Dip them in some water with lemon for 15 minutes
  • Drain and then stuff their hearts with a mixture of garlic, parsley, salt and pepper.
  • Let them cook in abundant oil together with the diced stems
  • Add wine and water, covering them completely.
  • Cook on a low flame until the oil evaporates
