Very special green recipes | Second courses

Spinach flans (4 servings)

Ingredients
  • 1 kg of spinach
  • 1 glass water
  • extra virgin olive oil
  • 4 tablespoons of tomato pulp
  • 2 eggs
  • a pinch of nutmeg
  • salt, white fresh ground pepper


Preparation method

  • Cleanse and wash the spinach (or use those already washed). Cook them in very few salted water for 10 minutes. Drain and squeeze them so to obtain a puree.
  • Beat the eggs in a bowl and add the spinach, the cream, a pinch of nutmeg, salt and pepper. Mix together and pour in 4 greased moulds.
  • Oven in bain-marie at 150° C for about 20 minutes.
  • Take out of the oven and leave them stand for 10 minutes.
  • Serve garnishing with a tablespoon of tomato pulp.
