Cleanse and wash the spinach (or use those already washed). Cook them in very few salted water for 10 minutes. Drain and squeeze them so to obtain a puree.
Beat the eggs in a bowl and add the spinach, the cream, a pinch of nutmeg, salt and pepper. Mix together and pour in 4 greased moulds.
Oven in bain-marie at 150° C for about 20 minutes.
Take out of the oven and leave them stand for 10 minutes.
Serve garnishing with a tablespoon of tomato pulp.
