Cleanse and slice the artichokes. Wash, chop the onions and let it brown with oil and butter in a pan.
Add the artichokes and after few minutes put in the flour. Blend carefully avoiding lumps and pour in the hot stock and milk rather warm. Let it boil and cook on a low flame for 1 hour
Blend all together and put the soup obtained in the pan again. Let it boil once again, add the cream, cheese and salt.
This soup is delicious on baked bread and also for some varieties of pasta, specially the short ones.
(1) Boil a carrot, an onion, a stem of celery and a little tomato in slightly salted water for half an hour.
