Lettuce soup
(4 servings)
Ingredients
1 head of lettuce
½ onion
1l vegetable stock (1)
0.3l milk
40g starch
100g cream
1 yolk
20g butter
salt, pepper
Preparation method
Cleanse the head of lettuce. Brown ½ chopped onion with butter and add lettuce. Cook on a high flame for 2 minutes.
Pour in the hot stock, milk and starch previously cooked in hot water. Cook for 40 minutes and mix all.
Put all the ingredients into a pan and cook again.
Add yolk, cream, salt and pepper. Blend and let boil for 2-3 minutes. The soup obtained can be served with crouton.
(1) Boil a carrot, an onion, a stem of celery and a little tomato in slightly salted water for half an hour.
