There are
different kinds of baby leaf salads: long and dark green leaves,
tender and white leaves, or with small curly heads. The plant
has many tender leaves which can be cut even two or three
times during the vegetative cycle, because they grow up very
slowly.
Weight:
Their length is ranging between 9 and 13 cm.
Nutritional values:
Very poor in calories, they are a refreshing appetizer. They have
a good content in vitamins, minerals and trace elements, in particular
iodine, nickel, cobalt, manganese and copper. Like all the other
kind of lettuces, baby leaf salads are rich in “lactucarium”,
a lactiferous juice which has an analgesic, sedative and hypnotic
action: to strengthen their healthy effects, it is suggested to
eat lettuce salads in particular at dinner, because their sedative
action helps sleeping.
Lettuce is furthermore a source of folic acid, an important vitamin
for blood cells reproduction.
Cooking suggestions:
It is suggested to eat Baby leaf raw in salads.
Alone or together with other kinds of salads, they are a tasty
side dish for meat or fish.
If cooked, they are very good with oil and salt dressing.
